Increasingly, nutrition is top-of-mind for people across the country as they make choices regarding their food. From incorporating "stealth nutrition" principles into their menus to employing full-time registered dietitians, college and university foodservice departments are meeting their obligation to provide healthy, nutritious food to their customers. NACUFS, in cooperation with the Culinary Institute of America (CIA) and the Food Allergy & Anaphylaxis Network (FAAN), developed a two-part culinary nutrition webinar series that covered some of the critical issues facing college and university foodservice departments, including healthy eating, food allergies/intolerances, and religious and other special dietary considerations.
