2019 Keynote Speakers

Dan Gable

Dan Gable is an accomplished wrestler, coach, alumni of Iowa State University. He is a three-time All-American champion, three-time USA Freestyle National Champion, 1972 Olympic Gold Medalist and top one hundred Olympians of all time, just to name a few of his many accomplishments. As a coach, he led Iowa to fifteen NCAA Titles, maintained seven perfect seasons, and was considered the NCAA coach of the year three times. Gable coached teams and athletes for 35 years.

As a motivational speaker, Dan shares his journey to success, pushing the limits, setting goals, and raising the bar higher.  Gable’s speaking style is dynamic and entertaining. He relates his life experiences and gives his formula for success which his listeners can apply in their everyday lives.

“I’m a big believer in starting with high standards and raising them. We make progress only when we push ourselves to the highest level..." Gable says.

Andy Schumacher

Andy Schumacher is the chef and co-owner of Cobble Hill Eatery and Dispensary in Cedar Rapids, Iowa, an upscale, fine dining restaurant. While living in New York, Andy and his partner Carrie began forming firm ideals on sustainability, with access to some of the best grocery stores and farmers markets around. Menu offerings are based on seasonality, and availability of local farmers markets, encouraging sustainable food practice.

Andy started cooking after completing his Bachelor of Science degree at the University of Iowa. While preparing his medical school applications, Andy's passion for cooking grew, leading him on an entirely different path and into the realm of culinary arts. Through his experience in several New York restaurants, he started his own boutique catering company and made an appearance on The Next Food Network Star. With his own culinary dreams in mind, Andy moved back to Iowa and with his growing family to pursue his passion. He opened Cobble Hill in 2013, and a sister establishment, Caucho, in 2017.

Join owner and creator Dave Morgan in this super session as he shares with the audience how to be socially responsible while building and operating a business. Dave will address topics on environmental sustainability, community involvement and what he views to be the best business practices. During the session, he will also share how SingleSpeed Brewery works to make a positive difference in the environment and community on a daily basis.

Grassroots Cooking

Food, a source of nutrients, but more importantly, a tool to bring people together. There is nothing like sharing meals and recipes with others in a way that bridges generations, cultures and people. Join four regional chefs in this powerful super session as they share ideas, recipes and their techniques, to ensure their offerings are getting people to the table.

Mental Health and Food Services: Engagement, Accommodation and Disordered Eating

With mental health concerns on the rise, we all have a role to play in caring for our students. It's part of the exceptional service we provide and how we contribute to student success, retention and persistence to graduation. This session will help you understand how you can engage students around mental health concerns in a safe environment. We'll also explore options and accommodations for food issues while eating in dining halls. Finally, eating disorders and disordered eating are prevalent among college students and often coexist with other mental health concerns. Identifying potential signs and symptoms of eating disorders can equip college and university staff with the ability to assist students of potential concern and aid them in getting the appropriate care.
